Succulent blend of sweet carmalize onions and delicate apples over thick, pan-seared pork chops
|24 each||Bone-in Loin Pork Chops (6 oz)|
|1/2 c||Mrs. Dash Table Blend Seasoning (#J014/J019)|
|6 medium||Onions (sliced into 1/4" rings)|
|12 c||Apple Cider|
|6 medium||Apples (Peeled, Cored, and Sliced)|
|1 c||Brown Sugar|
|1/4 c||Corn starch slurry|
Chops: Marinate the chops in 4 cups of the apple cider for at least 4 hours before service.
Per order; remove chop from marinate, dab dry, season with Mrs. Dash Table Blend Seasoning, in a hot saute pan sear the chop on both sides until lightly browned, place chop pan and all into a preheated 500º oven to ordered temperature.
Remove from oven and place onto a dinner plate, ladle 3 ounces of carmalized onion and apple glaze atop chop, make sure you get plenty of garnish onto the chop.
Sauce: Bring a wide based sauce pan very hot, add 2 ounces oil, add the onion rings and allow to carmalize, stirring frequently, add the brown sugar and allow it to dissolve without burning.
Deglaze the pan with the apple cider and allow to reduce by a third.
Tighten the sauce slightly with the corn starch slurry, (do not add to much)
Add the sliced apples and the butter to finish the sauce.
Pour the sauce into a six size pan and take to the line for service.
