Apple Rum Raisin Bread Pudding

A delicious comfort-food favorite featuring applesauce and raisins.

1  qt Cold water
1  bag Foothill Farms® Bread Pudding Mix (#102)
24  oz Chunky applesauce
1  cup Raisins
1  tsp Rum extract
2  lbs Bread cubes (stale bread preferred)
  Caramel topping, vanilla glaze or powdered sugar, optional
Instructions
  1. Preheat conventional oven to 375ºF.

  2. Grease half pan with butter. Set aside.

  3. Pour cold water into mixing bowl. Pour contents of Bread Pudding Mix (20.32 oz) into water while vigorously stirring with a wire whip until smooth.

  4. Stir in applesauce, raisins and rum extract and mix until well combined. Add bread to wet mixture and gently stir to combine.

  5. Once bread has absorbed most of the mixture, transfer to prepared baking dish and bake for 40-45 minutes.

  6. Remove bread pudding from oven. Product will settle and shrink some upon cooling. To serve warm, cool bread pudding for 10 prior to cutting. Drizzle with caramel topping or vanilla glaze, or dust with powdered sugar.
