This super side marries creamy potato salad with the mild heat of Buffalo wings.
|1 bag||Foothill Farms® Blue Cheese Dressing Mix (#V403)|
|1 c||Buffalo sauce|
|1/4 c||Ground sweet paprika|
|1 1/2 c||Minced celery|
|2 c||Thinly sliced scallions|
|1/2 c||Minced red onion|
|12 lb||Yukon Gold potatoes, small, halved|
In a large mixing bowl, add contents of Dressing packet buttermilk and mix well with wire whip or electric mixer at low speed. Add mayonnaise. Mix at low speed for about 2 minutes until smooth.
Add the buffalo sauce, paprika, celery, scallion and red onion and evenly combine. Reserve cold.
2. Lightly spray potatoes with pan spray. Season with salt to taste. Roast in 400°F oven for approx. 45 - 60 minutes, until fully cooked, crispy and soft (but not mushy). Remove from oven and chill completely.
Once chilled, place potatoes in a mixing bowl. Add 4 ½ c of reserved Buffalo Blue Cheese Dressing and stir to evenly combine.
