Chicken Alfredo Flatbread

16  lb 3 oz Ultra Loco Bread
2  bags Foothill Farms® Alfredo Sauce Instant Mix (#090T)
1  gallon 8 fl oz Water
11 1/4  lb Chicken, precooked (4/2.5lb)
6 3/4  lb Mozzarella cheese
3  lb 8 oz Broccoli, raw
3  lb Peppers, sweet, red, raw
Instructions
  1. Pour 1 gallon of hot water (180°-190°F) into mixing bowl or container. Pour contents of two bags of Foothill Farms® Deluxe Alfredo Sauce Creamy Parmesan Instant Mix into water while vigorously stirring with a wire whip or with mixer on low speed. Continue stirring until mix is completely dissolved and sauce is smooth. Cover and let stand 3-5 minutes.

  2. To assemble flatbread: Place flatbread on sheet pan. Spread 2 oz of sauce on each piece. Place 1.25 oz of cooked chicken on each piece topped with 2 TB of chopped broccoli, 2 TB diced red pepper and 0.75 oz of mozzarella cheese.

  3. Bake at 350°F for 15 minutes or until product reaches 160°F.
