3 lb | Fully cooked diced chicken |
21 oz | Canned diced chilies (1 lb 5 oz) |
1 #10 can | Great Northern beans, undrained |
1 bag | Foothill Farms Chili Seasoning Mix (#V417) |
1 gal | Hot water (180°-190°F) |
1 bag | Foothill Farms Chicken Flavor Soup Instant Mix (#060T) |
1 3/4 lbs | Shredded Monterey Jack cheese |
Fresh chopped cilantro |
Instructions
In a stockpot, sauté diced onions in olive oil until opaque.
Add chicken, chilies and beans. Heat to 145°F.
Add chili seasoning and blend well.
In a separate mixing container, add hot water. Pour contents of chicken soup mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved.
Add soup mix to stockpot. Mix well. Cover and bring to 180°F, stirring frequently. Hold at 180°F for 5-10 minutes.
Garnish with cheese and cilantro.
