A delicious twist on traditional chili. This recipe is a flavorful blend of chicken, white beans and chilies mixed with our Chili Seasoning and Chicken Flavor Soup Mix.
|2 lb||Diced onions|
|4 Tbsp||Olive oil|
|3 lb||Fully cooked diced chicken|
|21 oz||Canned diced chilies (1 lb 5 oz)|
|1 #10 can||Great Northern beans, undrained|
|1 bag||Foothill Farms Chili Seasoning Mix (#V417)|
|1 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms Chicken Flavor Soup Instant Mix (#060T)|
|1 3/4 lbs||Shredded Monterey Jack cheese|
|Fresh chopped cilantro|
In a stockpot, sauté diced onions in olive oil until opaque.
Add chicken, chilies and beans. Heat to 145°F.
Add chili seasoning and blend well.
In a separate mixing container, add hot water. Pour contents of chicken soup mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved.
Add soup mix to stockpot. Mix well. Cover and bring to 180°F, stirring frequently. Hold at 180°F for 5-10 minutes.
Garnish with cheese and cilantro.
