Chicken & Broccoli Alfredo

Smart Snack Approved as an entree. Meets calorie, fat and sodium requirements for center of the plate. Provides 1/8 cup Vegetable, 2 oz M/MA, 1 oz eq Grain

Chicken & Broccoli Alfredo

5  lb Diced chicken, fully cooked, IQF, 1/2" squares
2  Tbsp Mrs. Dash Garlic & Herb Salt Free Seasoning Blend (optional)
1/2  gal Hot water (180°-190°F)
1  bag Foothill Farms® Alfredo Sauce Mix Reduced Sodium (#S099)
5  c Steamed, chopped, broccoli
3 1/4  lb Cooked whole grain spaghetti pasta
Instructions
  1. To prepare chicken: Thaw chicken in cooler overnight or until fully thawed. Toss with Mrs. Dash Seasoning and cook per manufacturer's directions.

  2. To prepare sauce: Pour hot water into mixing container. Pour contents of Sauce Mix (14 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth. Set aside.

  3. To Serve: layer 1/4 cup alfredo sauce, 1/8 cup broccoli and 2 oz of chicken over 1/2 cup spaghetti.
