Chicken & Mashed Potato Bowl

2 oz serving provides 2 oz eq M/MA, 1 oz eq whole grain, 3/4 c starch

280  each Chicken nuggets, fully cooked, crispy, chunk-shaped
280  Fl oz Potato, mashed instant/dry (10/49 oz pouches)
1  bag Foothill Farms® Instant Chicken Gravy Mix (G406-F6700)
1  gal Hot water (180° - 190°F)
17 1/2  cups Corn, frozen
Instructions
  1. To prepare chicken: Thaw chicken in cooler overnight or until fully thawed. Alternatively place frozen chunks in preheated oven at 375°F for 6-8 minutes. Remove chicken when done and place in a warming cabinet until ready to use.

  2. To prepare gravy: Pour hot water into mixing container. Pour contents of Chicken Gravy Mix package (14.1 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and gravy is smooth. Set aside.

  3. To prepare mashed potatoes: follow package instructions.

  4. To assemble bowls: Add 4 fl oz of prepared mashed potatoes. Top with 1/4 cup of prepared corn. Place 4 chicken nuggets on top. Cover with 1/4 cup chicken gravy.
