Chilled Berry Soup

Great summertime cold soup. Béchamel is pureed with a luscious blend of mixed berries (blackberries, raspberries, blueberries & strawberries), honey, fresh mint and a touch of lime juice.

Chilled Berry Soup
Amount Item
1/2  gallon Hot water (180°-190°F)
1  bag Foothill Farms® White Sauce Instant Mix (#0701)
48  oz Mixed berries (blackberries, raspberries, blueberries, strawberries), IQF
1/2  c Lime juice
1 1/2  c Honey
40  each Mint leaves, fresh (large size)
  1. Pour hot water into a mixing container. Pour contents of White Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.

  2. Place all ingredients in blender and puree until smooth. Serve chilled.
