Hot fries covered in a savory & spicy melty chipotle cheddar cheese sauce, refried beans, shredded chicken and jalapenos then topped with pepper jack, cool sour cream and chopped cilantro.
|1 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms® Cheese Sauce Mix #088T (2 bags #094T or #888T)|
|2 1/4 c||Tabasco® Chipotle Sauce|
|15 lb||Frozen French fries|
|5 lb||Shredded chicken, fully-cooked|
|2 1/2 lb||Shredded pepper jack cheese|
|2 1/2 c||Sour cream|
In a mixing container pour in hot water. Add contents of Cheese Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Add chipotle sauce to cheese sauce. Whisk to combine. Reserve hot (never boil).
Cook 3 oz of fries, to order. Allow hot fries to drain in fry basket.
Place fries in serving container. Top with 2 oz drizzle of hot Chipotle Cheddar Cheese Sauce, 2 Tbsp refried beans, 1 oz chicken, 5 slices jalapenos, 1/2 oz pepper jack, 1 Tbsp sour cream and sprinkle with cilantro.
