Coconut Pecan Bread Pudding

Coconut, raisins, and nuts combine to transform plain bread pudding into something special.

Recipe Yield: 1/2 pan
Ingredients

1  qt Cold water
1  bag Foothill Farms® Bread Pudding Mix (#102T)
1 1/2  lb Bread cubes (stale bread preferred)
1  cup Shredded coconut
1/2  cup Chopped pecans
1/2  cup Raisins
  Caramel topping, vanilla glaze or powdered sugar, optional
Instructions
  1. Preheat conventional oven to 375ºF.

  2. Grease half pan with butter. Set aside.

  3. Pour cold water into mixing bowl. Pour contents of Bread Pudding Mix (20.32 oz) into water while vigorously stirring with a wire whip until smooth.

  4. Add bread to wet mixture and gently stir to combine. Fold in coconut, pecans and raisins.

  5. Once bread has absorbed most of the mixture, transfer to prepared baking dish and bake for 40-45 minutes.

  6. Remove bread pudding from oven. Product will settle and shrink some upon cooling. To serve warm, cool bread pudding for 10 prior to cutting. Drizzle with caramel topping or vanilla glaze, or dust with powdered sugar.
