A Mexican inspired pizza with all of the chile and cheesy chicken goodness of an enchilada.
|1 cup||Foothill Farms Enchilada Sauce Instant Mix (#V532, #532T), prepared|
|1 cup||Diced/sliced, grilled, or pre-cooked chicken|
|1/2 cup||Corn, drained|
|1/2 cup||Roasted red peppers, diced|
|1 cup||Pepper jack cheese, shredded|
|1||RTU rectangle flatbread, 12" x 8", 1/8" thick|
Evenly spread 1 cup of prepared Enchilada Sauce over the flatbread, ensure the entire flatbread to outside edge is covered.
Evenly place corn, peppers and cheese over sauced flatbread.
Bake in 400°F convection oven for 10 minutes. (Tip: Try cooking in a wood-fired oven.)
Remove flatbread from oven. Garnish with shredded lettuce.
