|1 pk||Foothill Farms® Nacho Cheese Sauce Mix (#080T)|
Make salsa according to Foothill Farms® Salsa Mix package instructions. (Add contents of salsa seasoning package to one #10 can of petite diced tomatoes. Stir until well blended. Cover and set aside.)
Evenly place tater tots across a 2" half-size pan and bake according to package directions, or until crispy.
Make taco meat according to Foothill Farms® Taco Meat Seasoning package instructions. (In a large skillet, brown 10 lb of ground meat. Drain excess fat. Add contents of taco meat seasoning packet and 1-1/2 quarts (6 cups) of water. Mix thoroughly. Bring to a boil, stirring frequently. Reduce heat and simmer, uncovered, 20-30 minutes, stirring occasionally.)
Make cheese sauce according to Foothill Farms® Cheese Sauce package instructions. (In a large bowl, fill with 1/2 gallon of hot (160º-190º F) water. Gradually pour in contents of cheese sauce package while stirring briskly with a wire whisk. Mix until well blended. Let stand 3-5 minutes. Whisk again until smooth.)
To assemble: Place 2.5 lbs of taco meat evenly across the top of the tater tots. Pour 1/2 gal of cheese over the taco meat. Stir salsa and pour 3.5 cups over cheese sauce. Serve immediately.
