Recipe Yield:

3  oz Dry active yeast
1  qt Water (warm)
5 1/2  lb Flour
3/4  c Mrs. Dash Garlic & Herb
2  oz Salt
2  oz Sugar
1  medium Egg White
1  medium Potato (boiled soft)
2  oz Butter
2  c Water
Instructions
  1. Peel, clean and cut the potato into evently sized cubes. In a large stock pot, place cubes into water and place onto a stove, cook over medium heat until the potato is soft. Drain the water off, add the butter and whisk till potato is smooth and butter is completely dissolved.

  2. Bloom the yeast in a mixing bowl with the warm water (5-10 minutes).

  3. In a seperate mixing bowl combine the flour, Mrs. Dash Garlic Herb Seasoning, salt and the sugar.

  4. Add the flour mixture to the warm water and yeast mixture, then add the potato and butter mix atop the flour.

  5. Mix on speed one for 3 minutes or until a ball is formed, turn mixer off and continue to mix until ball is quite smooth in texture.

  6. Remove bowl from mixer, place dough ball into a seperate well greased bowl and cover loosely.

  7. Allow to rise for one hour or until it is double in size.

  8. Punch the dough down to remove any larger air pockets, cut the dough into desired size, (recommended size 13 oz) and place onto a greased baking sheet.

  9. Cover and allow to rise again, bake at 350º till golden brown, approximately 45 minutes.
