Greek Caesar Salad

Fresh chopped romaine lettuce and red onion rings topped with a Greek Caesar dressing that is Caesar with tomato, cucumber and feta cheese.

1  bag Foothill Farms® Caesar Dressing Mix (#J351)
2  c Cold water
1  qt Vinegar (white distilled)
2 3/4  qts Vegetable oil, divided
5  c Feta cheese crumbles
6  c Petite diced tomatoes
4  c Small diced English cucumber
48  c Chopped romaine lettuce
96   Red onion ring slices
6  c Croutons
  1. Pour contents of Caesar Dressing Mix (12.5 oz) into a 12-quart bowl mixing bowl of an electric mixer with a wire whip attachment.

  2. Add cold water, vinegar and 3 cups of vegetable oil. Mix at high speed for about three minutes.

  3. Scrape down sides of bowl. Turn mixer back on and slowly pour in remaining vegetable oil, feta, tomatoes and cucumber. Once oil has been added, continue mixing at high speed for another three minutes. Reserve cold.

  4. Place 2 cups of lettuce in a bowl with 2 Tbsp Greek Caesar Dressing. Toss to combine. Top with 4 onion rings and 1/4 c croutons.
