Hollandaise Breakfast Casserole

Hollandaise Breakfast Casserole

1  bag Foothill Farms Hollandiase Sauce Instant Mix (#V104)
1  qt Hot water (180°-190°F)
8  oz Diced tomato, pepper and onion mix
8  oz Diced ham
1  lb Cooked diced potatoes (frozen diced potatoes can be substituted)
16  oz Cooked scrambled eggs
6  oz Croutons
4  oz Shredded cheddar cheese
  1. In a mixing container, add hot water. Pour contents of Hollandaise sauce mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved.

  2. Cook onions, peppers and tomatoes in a skillet until tender. Add to Hollandiase sauce.

  3. Add the scrambled eggs, diced ham and diced potatoes to Hollandaise sauce. Mix well.

  4. Pour mixture into a well greased half pan. Top with croutons and shredded cheddar cheese.

  5. Bake at 350°F for 40 minutes or until internal temperature reaches 180°F.
