Hummus with Whole Grain Chips

Smart Snack Approved as a vegetable. Meets calorie, fat and sodium requirements for a vegetable snack. Provides 1/2 cup Vegetable, 1 oz eq Grain

2  #10 Canned garbanzo beans (chickpeas) or great northern white beans, drained
3 1/4  cups Frozen lemon juice concentrate, reconstituted
2 1/2  cups Peanut butter, tahini or sunflower seed butter
2  bags Foothill Farms® Charro Style Bean Seasoning (#V461)
3 1/4  cups Water
10  chips/serving Whole grain tortilla chips, unsalted, low fat
Instructions
  1. Combine all ingredients in a food processor and puree to a smooth consistency.

  2. Spread into two shallow pans (12" x 20" x 2 ½") to a product depth of 2" or less.

  3. CCP: Chill to 41° F or lower within 4 hours. Cover. Refrigerate until service.

  4. Portion with No. 8 scoop (½ cup).
