Hot sweet potato fries covered in a melty savory and sweet cheddar cheese sauce, pulled chicken, crispy bacon and green onions.
|1 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms® Cheese Sauce Mix #088T (or 2 bags #094T)|
|2 1/4 c||Kansas City-style BBQ sauce|
|15 lb||Frozen sweet potato fries|
|5 lb||Shredded chicken, fully-cooked|
|2 1/2 lb||Bacon, fully-cooked|
|2 1/2 lb||Finely chopped green onions|
In a mixing container pour in hot water. Add contents of Cheese Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Add BBQ sauce to cheese sauce. Whisk to combine. Reserve hot (never boil).
For order: Cook 3 oz of sweet potato fries. Allow to drain in fry basket.
Place fries in serving container. Top with 2 oz hot cheese sauce. Then add 1 oz chicken, 1/2 oz bacon and 1/2 oz onions.
