|3 1/2 qts||Hot water (180°-190°F), divided|
|1 bag||Foothill Farms® Cheese Sauce Mix Reduced Sodium (#C201)|
|8 lb||Beef/Turkey crumbles, fully cooked|
|1 bag||Foothill Farms® Select Taco Seasoning (#V413)|
|1 #10 can||Diced tomatoes|
|1 bag||Foothill Farms® Salsa Seasoning (#V425)|
|38 bags||Tortilla chips, no salt|
Pour 1/2 gal hot water into mixing bowl. Pour contents of cheese sauce mix (16 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved and cheese sauce is smooth. Cover and let stand 3-5 minutes. Stir before using. Reserve warm.
Combine 1 ½ qts hot water and contents of Taco Seasoning (6.6 oz) in full-size steam table pan. Mix well. Add cooked meat and mix thoroughly. Cover and bake in 400ºF convection oven for 15-20 minutes; or until product reaches 180ºF. Reserve warm.
Pour diced tomatoes into a large bowl. Add Salsa Seasoning (5.8 oz). Stir until well blended. Cover and let sit at room temperature for 30 minutes.
For service: layer 2 oz taco meat with 2 oz of cheese sauce over 10 tortilla chips. Top with 2 Tbsp salsa.
