|1/2 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms® White Sauce Mix (#0701)|
|1 1/2 qts||Whole milk|
|1 Tbsp||Lobster base|
|6 cups||Shredded easy melt white cheddar|
|2 lb||Chunked lobster meat|
|4 lbs||Cooked pasta (2 lb dry)|
|1 lb||Plain bread crumbs|
|1/2 cup||Foothill Farms® Caesar Dressing Mix (#J351)|
|1/2 cup||Shredded Parmesan cheese|
Pour water into a mixing container. Pour contents of White Sauce Mix (11 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth. Add milk and lobster base and continue stirring.
Stir in easy melt cheddar, until blended. Fold in lobster meat and pasta. Place mixture in a full-size lined hotel pan.
For bread crumbs: Blend bread crumbs, Foothill Farms® Caesar Dressing Mix, and Parmesan cheese in a mixing bowl.
Sprinkle top of pasta with crumb mixture. Place in 350°F convection oven to toast, about 15-20 minutes or until it reaches 165°F.
