Mandarin Orange Chicken Salad Cup

Smart Snack Approved as an entree. Meets calorie, fat and sodium requirements for center of plate. Provides 1 c dark greens, 1/2 red/orange, 2 oz M/MA

1 3/4  gal Hot water (180°-190°F), divided
2  bags Foothill Farms® Mandarin Orange Sauce Mix Low Sodium (#V428)
1  qt Vegetable oil
10  lb Diced chicken, fully-cooked
8 1/4  lb Chopped romaine lettuce
8  c Chopped red peppers
8  c Shredded carrots
Instructions
  1. For Mandarin Orange Dressing: Pour 3 qts hot water into mixing container. Pour contents of one Sauce Mix (16.5 oz) into water while vigorously stirring with a wire whisk. Add oil and continue stirring until smooth. Cover and cool in refrigerator.

  2. For Sauce: Pour 1/2 gal hot water into mixing container. Pour contents of one Sauce Mix (16.5 oz each) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth. Set aside.

  3. For Chicken: Thaw chicken in cooler overnight or until fully thawed. Divide chicken two full size steamtable pans. Pour sauce evenly over chicken and toss to coat. Place in 350°F convection oven 15 - 20 minutes or until internal temperature reaches 165°F. Remove from oven and cool.

  4. In a bowl, place 2 c lettuce topped with 1/4 c peppers, 1/4 c carrots, 2 Tbsp Mandarin Orange Dressing and 2 oz Mandarin Orange Chicken.
