Memphis Cheese Fries

Hot fries covered in a melty savory and spicy cheddar cheese sauce, shaved beef with grilled onions and red bell peppers.

Recipe Yield: 80 1/4-cup servings of sauce
Memphis Cheese Fries
Ingredients
Amount Item
1  gal Hot water (180°-190°F)
1  bag Foothill Farms® Cheese Sauce Mix #088T (or 2 bags #094T)
2 1/4  c Memphis-style BBQ sauce
15  lb Frozen French fries
5  lb Shaved beef, fully-cooked
2 1/2  lb Diced grilled onions
2 1/2  lb Diced grilled red bell peppers
Instructions
  1. In a mixing container pour in hot water. Add contents of Cheese Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.

  2. Add BBQ sauce to cheese sauce. Whisk to combine. Reserve hot (never boil).

  3. For order: Cook 3 oz of waffle fries. Allow to drain in fry basket.

  4. Place fries in serving container. Top with 2 oz hot cheese sauce. Then add 1 oz beef, 1/2 oz onions and 1/2 oz peppers.
