Pan-Seared Cod with Creamy Lemon Poppy Seed Dressing

Serve a fish fillet flavored with fresh creamy poppy seed sauce.

1  c Cool water
1  c White vinegar
1  c Fresh lemon juice
1  c Sugar
1  bag Foothill Farms® Poppy Seed Dressing & Seasoning Mix (#V601)
5  c Oil
1/2  c Mayonnaise
6  oz Cod
  Salt and pepper, to taste
  1. In a large mixing bowl, add Poppy Seed Dressing & Seasoning Mix (8 oz) to water, vinegar and sugar. Mix well with wire whisk or electric mixer at low speed. Add oil and continue mixing until combined. Add mayonnaise and lemon juice. Continue mixing until thoroughly combined. Cover and refrigerate 3-4 hours so dressing will thicken. Stir before using.

  2. Sprinkle salt and pepper over cod. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add fish and sauté 5 minutes on each side or until fish flakes easily when tested with a fork.

  3. Serve fish with creamy lemon poppy seed sauce and garnish with a thin slice of lemon and chopped parsley.
