A unique twist on an American classic. Hot French fries covered with a savory and spicy horseradish cheese sauce, thin steak, onions, peppers and provolone cheese.
|1 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms® Cheese Sauce Mix #088T (2 bags #094T or #081T)|
|2 1/4 c||Creamy horseradish sauce|
|15 lb||Frozen French fries|
|5 lb||Shaved steak, fully-cooked|
|2 1/2 lb||Diced, grilled onions|
|2 1/2 lb||Diced, grilled green bell peppers|
|2 1/2 lb||Shredded provolone cheese|
In a mixing container pour in hot water. Add contents of Cheese Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Add chipotle sauce to cheese sauce. Whisk to combine. Reserve hot (never boil).
Cook 3 oz of fries, to order. Allow hot fries to drain in fry basket.
Place fries in serving container. Top with 2 oz drizzle of hot Cheese Sauce, 1 oz beef, 1/2 oz onions, 1/2 oz peppers and 1/2 oz shredded cheese.
