Tender rotini pasta tossed in tangy poppy seed dressing with seasoned chicken mixed with chopped onions and celery then garnished with cranberries and toasted almond slivers
|1 c||Cool water|
|2 c||White vinegar|
|1 bag||Foothill Farms® Poppy Seed Dressing & Seasoning Mix (#V601)|
|16 c||Cooked rotini pasta|
|12 c||Cooked diced chicken, thawed|
|2 1/2 c||Chopped onions|
|4 c||Chopped celery|
|2 c||Dried Cranberries|
|4 c||Toasted almond slivers|
In a large mixing container, add Poppy Seed Dressing & Seasoning Mix (8 oz) to water, vinegar and sugar. Mix well with wire whisk or electric mixer at low speed. Add oil and continue mixing until thoroughly combined. Cover and refrigerate 3-4 hours so dressing will thicken.
In a separate large mixing bowl, blend pasta, chicken, onion, celery, cranberries and almonds.
Add 8 cups of Poppy Seed Dressing to bowl and toss until evenly coated. Cover and refrigerate.
