Poutine

Many of today's patrons are eating throughout the day to fit their non-stop lifestyles. A common Canadian dish made with French fries, topped with gravy and cheese curds.

Recipe Yield: 32 12-oz servings

Ingredients
Amount Item
1  gal Hot water (180°-190°F)
1  bag Foothill Farms® Instant Gravy Mix (Brown #074T or Beef #325T/#075T)
12  lb Fries, IQF
48  oz Cheese curds
Instructions
  1. Pour hot water into mixing container. Add Gravy Mix (14 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and gravy is smooth. Reserve warm.

  2. Cook 6 oz of fries to order and put on to serving dish. Top with 4 oz of gravy and 2 oz of cheese curds.
