Recipe Yield:

3  qts Rice, cooked
1/3  c Mrs. Dash Lemon Pepper
3  c Celery, diced
3/4  c Olive Oil
1 2/15  c Fresh Lemon Juice
1/3  c Chives, chopped
3  Tbsp Lemon Zest
2  Tbsp Dijon Mustard
1 1/2  lb Shrimp, peeled & cooked
1 1/2  lb Scallops, cooked
Instructions
  1. Combine rice, Mrs. Dash Lemon Pepper Seasoning, celery, oil, lemon juice, chives, lemon zest and dijon mustard together and allow it to marinade at least 2 hours.

  2. For service, place ½ cup of rice mixture in medium mixing bowl, add 1½ ounces of both the shrimp and scallops to the bowl.

  3. Mix shrimp and scallops with the rice mixture until they are coated well with the dressing of the rice mixture.

  4. Place into a medium size service bowl, pulling the shrimp and scallops to the top, for more visual appeal.
