Taco Soup

A delicious soup composed of similar ingredients to those used inside a taco. Soup may be topped with cheese, sour cream, green onions, avocado or tortilla chips. Recipe submitted by Bloomfield Schools NM.

Taco Soup
Amount Item
1  lb Gournd beef (or use 0.8 lb precooked beef crumbles)
1/2  medium Onion, diced
1  clove Garlic, minced
1 3/4  lb Canned pinto beans
1  lb Canned kidney beans
1 3/4  lb Canned diced tomatoes, drained
4  oz Canned diced green chili peppers
1  oz Foothill Farms® Taco Seasoning (either #V411 or #V413)
1  oz Foothill Farms® Ranch Dressing Mix (either #V400 or #V402)
2  c Water
  1. Brown beef. Add onions and garlic. Cook until done. Drain well.

  2. Add all additional ingredients and cook until flavors are blended and temperature reaches 165ºF (about 1 hour). Hold at 140ºF or higher.
