Vegetable Chili

This flavorful dish is a great alternative to traditional chili. The variety of vegetables and right amount of spice using our Chili Seasoning are the perfect combination.

Recipe Yield: 32 - 8 oz servings
Vegetable Chili

1  lb Diced onions
1  lb Diced green peppers
1  lb Diced red peppers
1  lb Diced zucchini
1  lb Diced mushrooms
1/2  c Olive oil
1  bag Foothill Farms Chili Seasoning Mix (#V417)
1  #10 can Diced tomatoes, undrained
1  #10 can Pinto beans, undrained
24  oz Shredded cheddar cheese
  Fresh chopped parsley
  1. In a stockpot, sauté onions, peppers, zucchini, and mushrooms until tender.

  2. Add chili seasoning. Blend well.

  3. Add tomatoes and beans. Mix well. Cover and bring to 180°F, stirring frequently. Hold at 180°F for 5-10 minutes.

  4. Garnish with cheese and parsley.
