This flavorful dish is a great alternative to traditional chili. The variety of vegetables and right amount of spice using our Chili Seasoning are the perfect combination.
|1 lb||Diced onions|
|1 lb||Diced green peppers|
|1 lb||Diced red peppers|
|1 lb||Diced zucchini|
|1 lb||Diced mushrooms|
|1/2 c||Olive oil|
|1 bag||Foothill Farms Chili Seasoning Mix (#V417)|
|1 #10 can||Diced tomatoes, undrained|
|1 #10 can||Pinto beans, undrained|
|24 oz||Shredded cheddar cheese|
|Fresh chopped parsley|
In a stockpot, sauté onions, peppers, zucchini, and mushrooms until tender.
Add chili seasoning. Blend well.
Add tomatoes and beans. Mix well. Cover and bring to 180°F, stirring frequently. Hold at 180°F for 5-10 minutes.
Garnish with cheese and parsley.
