|1 bag||Foothill Farms® Blue Cheese Dressing Mix(#V403)|
|1 c||Dried tarragon|
|1/4 c||Red wine vinegar|
|6 Tbsp||Dijon mustard|
|24 each||Chicken breast, boneless, skinless, 6 oz. filets, 9 lb|
|144 each||Grilled asparagus|
|12 c||Cooked Jasmine rice|
In a large mixing bowl, add contents of Dressing packet to buttermilk and mix well with wire whip or electric mixer at low speed. Add mayonnaise. Mix at low speed for about 2 minutes until smooth
In a separate bowl, mix tarragon and vinegar and allow to marinate for 5 minutes, then add to Blue Cheese Dressing. Add mustard. Mix to combine. Reserve cold.
For 1 order: Grill chicken breast to order to an internal temperature of 180°F. Plate chicken alongside 6 spears of grilled asparagus and ½ c jasmine rice. Spoon 2 Tbsp of cold Tarragon Blue Cheese Dressing around/over the chicken.
