|1/2 cup||olive oil|
|1/4 cup||brown sugar|
|1 cup||sherry wine|
|2 qts.||Foothill Farms® Au Jus, prepared (#077)|
|2 qts.||Foothill Farms® Irish Vegetable Beef Soup, prepared (#059)|
|1/4 cup||dried chives|
In large stock pot saute onions with brown sugar in olive oil, caramelizing slightly. (If onions start to dry out add 1/2 cup of water periodically.)
Deglaze pan with sherry wine and allow to come to a boil.
Add Au Jus and Irish Vegetable Soup to onion mixture and bring to a slow simmer. Allow to cook for 10 minutes. Ladle into serving bowls. Garnish with dried chives.
