Bread Pudding Fruit Squares

Smart Snack Approved as an entree. Meets calorie, fat and sodium requirements for center of plate. Provides 1/2 cup Fruit, 2 oz eq Grain. Prep day before and bag.

2  lb Bread, 100% Whole Wheat*
1 1/2  qt Water
1  bag Foothill Farms® Bread Pudding Mix with Cinnamon (#092T)
1  lb Raisins
1 1/2  lbs Dried Cherries
  1. Dice bread into 2” pieces and toast on flat sheet pan for approximately 15 minutes at 350°F.

  2. Pour water into mixing bowl or container. Pour Foothill Farms® Bread Pudding Mix w/ Cinnamon (20.32 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mixture is completely dissolved and smooth.

  3. Add bread and dried fruit to mixture gently stir to combine.

  4. Once bread has absorbed most of the mixture, spread evenly and thinly over sprayed baking sheet. Bake in a convection oven at 350°F for 30 minutes.

  5. Remove from oven and cut into squares.

  6. *Bread can be a mixture of any type of whole grain bread products including bread, cookies, pancakes, waffles, etc. Works with any combination of leftover whole grain products.
