|1 bag||Foothill Farms Hollandiase Sauce Instant Mix (#V104)|
|1 qt||Hot water (180°-190°F)|
|8 oz||Diced tomato, pepper and onion mix|
|8 oz||Diced ham|
|1 lb||Cooked diced potatoes (frozen diced potatoes can be substituted)|
|16 oz||Cooked scrambled eggs|
|4 oz||Shredded cheddar cheese|
In a mixing container, add hot water. Pour contents of Hollandaise sauce mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved.
Cook onions, peppers and tomatoes in a skillet until tender. Add to Hollandiase sauce.
Add the scrambled eggs, diced ham and diced potatoes to Hollandaise sauce. Mix well.
Pour mixture into a well greased half pan. Top with croutons and shredded cheddar cheese.
Bake at 350°F for 40 minutes or until internal temperature reaches 180°F.
