Fresh flavors of tart lemon and cool mint combine in this dressing to make a light and refreshing vinaigrette.
In a large mixing bowl, add contents of Italian Vinaigrette Salad Dressing Mix (6.5 oz) to 1 quart vinegar, 3 cups cold water, 1 cup lemon juice, and 1 cup spearmint. Mix well with electric mixer at high speed until mix is dissolved and dressing is smooth.
Continue mixing and slowly add ½ gallon vegetable oil. Mix at high speed for about two minutes until well mixed and evenly combined.
Store covered in the refrigerator. Stir thoroughly before using.
