Hot fries covered in a melty savory and spicy cheddar cheese sauce, shaved beef with grilled onions and red bell peppers.
|1 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms® Cheese Sauce Mix #088T (or 2 bags #094T)|
|2 1/4 c||Memphis-style BBQ sauce|
|15 lb||Frozen French fries|
|5 lb||Shaved beef, fully-cooked|
|2 1/2 lb||Diced grilled onions|
|2 1/2 lb||Diced grilled red bell peppers|
In a mixing container pour in hot water. Add contents of Cheese Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Add BBQ sauce to cheese sauce. Whisk to combine. Reserve hot (never boil).
For order: Cook 3 oz of waffle fries. Allow to drain in fry basket.
Place fries in serving container. Top with 2 oz hot cheese sauce. Then add 1 oz beef, 1/2 oz onions and 1/2 oz peppers.
