Ingredients

| 1 cup | Onion |
| 1 cup | Pepper |
| 1 lb | Ground beef |
| 1/2 cup | Foothill Farms® Classic Red Enchilada Sauce Mix (#V532) |
| 1/2 cups | Hot water |
| 1 cup | Shredded Monterey cheese |
| 18 each | Frozen biscuit dough, large 4-4.5 oz, thawed |
Instructions
In a pan, sauté onions and peppers until soft.
Brown ground beef.
Add dry Enchilada Sauce Mix and water to beef mixture. Remove from heat and stir in cheese.
Roll out biscuits to approx 6" diameter.
Using a #30 scoop (1.5 oz) portion out mix and place in center of biscuit.
Fold over in half, bushed with water and sprinkled with Monterey cheese.
Place on a lined baking sheet and bake in 325F convection oven for 16 minutes.
