| 1 bag | Foothill Farms Hollandaise Sauce Instant Mix (#V104) |
| 1 qt | Hot water (180°-190°F) |
| 3 lb | Waffle fries |
| 1 lb | Diced ham |
| 8 | Fried eggs |
| 4 oz | English muffin croutons |
Instructions
In a mixing container, add hot water. Pour contents of Hollandaise sauce mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved. Reserve warm.
Prepare waffle fries per package instructions.
For service: arrange 6 oz chip on plate. Layer 2 oz diced ham, fried egg and 4 oz Hollandaise Sauce. Garnish with 1/2 oz of croutons.
