1 lb | Diced green peppers |
1 lb | Diced red peppers |
1 lb | Diced zucchini |
1 lb | Diced mushrooms |
1/2 c | Olive oil |
1 bag | Foothill Farms Chili Seasoning Mix (#V417) |
1 #10 can | Diced tomatoes, undrained |
1 #10 can | Pinto beans, undrained |
24 oz | Shredded cheddar cheese |
Fresh chopped parsley |
Instructions
In a stockpot, sauté onions, peppers, zucchini, and mushrooms until tender.
Add chili seasoning. Blend well.
Add tomatoes and beans. Mix well. Cover and bring to 180°F, stirring frequently. Hold at 180°F for 5-10 minutes.
Garnish with cheese and parsley.
