1 bag | Foothill Farms® Cheese Sauce Mix #088T (2 bags #094T or 081T) |
1 c | A-1 Steak Sauce Thick & Hearty |
12 lb | Fries, natural cut/skin on, IQF |
Sea salt, coarse | |
6 lb | Pork carnitas, fully cooked |
Instructions
In a mixing container pour in hot water. Add Cheese Sauce Mix (30 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Add A-1 to cheese sauce. Whisk to combine. Reserve hot (never boil).
Cook 6 oz of fries, to order. Allow hot fries to drain in fry basket than place in a mixing bowl. Salt and toss to combine.
Place fries in serving container. Top with a generous 4 oz drizzle of hot Cheddar Cheese Steak Sauce and 3 oz of hot pork carnitas.
