Recipe Yield:

1  bag Foothill Farms® Caesar Dressing Mix (#J351)
2  c Cold water
1  qt Vinegar (white distilled)
2 3/4  qts Vegetable oil, divided
4  c Guacamole
72   Shrimp, 16/20, peeled & deveined, tail off, raw, 4 lb
24  leaves Bibb lettuce
3  c Pico de gallo
  1. Pour contents of Caesar Dressing Mix (12.5 oz) into a 12-quart bowl mixing bowl of an electric mixer with a wire whip attachment.

  2. Add cold water, vinegar and 3 cups of vegetable oil. Mix at high speed for about three minutes.

  3. Scrape down sides of bowl. Turn mixer back on and slowly pour in remaining vegetable oil and guacamole. Once oil has been added, continue mixing at high speed for another three minutes. Reserve cold.

  4. Lightly spray shrimp with pan spray. Grill to order.

  5. For 1 wrap: Place 1 bibb lettuce cup on a clean work surface. Place 2 Tbsp pico de gallo inside lettuce, top with 3 grilled shrimp and 1 Tbsp Avocado Caesar Dressing.
