3 lbs. | onions, julienned |
1/2 cup | olive oil |
1/4 cup | brown sugar |
1 cup | sherry wine |
2 qts. | Foothill Farms® Au Jus, prepared (#077) |
2 qts. | Foothill Farms® Irish Vegetable Beef Soup, prepared (#059) |
1/4 cup | dried chives |
Instructions
In large stock pot saute onions with brown sugar in olive oil, caramelizing slightly. (If onions start to dry out add 1/2 cup of water periodically.)
Deglaze pan with sherry wine and allow to come to a boil.
Add Au Jus and Irish Vegetable Soup to onion mixture and bring to a slow simmer. Allow to cook for 10 minutes. Ladle into serving bowls. Garnish with dried chives.
