Recipe Yield:

3  lbs. onions, julienned
1/2  cup olive oil
1/4  cup brown sugar
1  cup sherry wine
2  qts. Foothill Farms® Au Jus, prepared (#077)
2  qts. Foothill Farms® Irish Vegetable Beef Soup, prepared (#059)
1/4  cup dried chives
  1. In large stock pot saute onions with brown sugar in olive oil, caramelizing slightly. (If onions start to dry out add 1/2 cup of water periodically.)

  2. Deglaze pan with sherry wine and allow to come to a boil.

  3. Add Au Jus and Irish Vegetable Soup to onion mixture and bring to a slow simmer. Allow to cook for 10 minutes. Ladle into serving bowls. Garnish with dried chives.
