Cucumber Dill Ranch Dressing

Fresh from the garden cucumber and dill add extra dimensions of flavor to zesty Foothill Farms Ranch Salad Dressing.

2  cups pureed cucumber (leave skin on for color)
1/2  cup chopped fresh dill
1  pkg. Foothill Farms® Ranch Salad Dressing Mix (regular-V400 or no MSG-402)
6  cups buttermilk
1/2  gal. mayonnaise
  1. In large mixing bowl add pureed cucumber, chopped dill and ranch salad dressing mix to buttermilk. Mix well with wire whisk or electric mixer at low speed.

  2. Add mayonnaise and continue mixing at low speed about 2 minutes until smooth.

  3. Refrigerate 3-4 hours so dressing will thicken. Stir before using. Store in refrigerator.

  4. NOTE: This dressing can be made "light" or "fat free" by using 3 qts. buttermilk and 1 qt. mayonnaise.
