|40 each||Tomatillos, huskes removed|
|1/2 gal||Hot water (180°-190°F)|
|1 bag||Foothill Farms® Orange Ancho Chile Sauce Mix-14.1 oz (#V460)|
|8 c||Frozen mango cubes, thawed|
|1 c||Minced red onion|
|6 Tbsp||Chopped fresh cilantro|
|24 each||Tilapia filets, 4-6 oz each|
|12 c||Rice pilaf, mixed grained, cooked|
Char tomatillos on a grill, then dice. Set aside.
Pour hot water into mixing container. Pour contents of Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Add mangoes, tomatillos, onion and cilantro to sauce. Stir to evenly combine. Reserve warm and set aside.
For 1 order: Grill tilapia filet to order for approx. 8 minutes and place on a warmed plate. Top each filet with 4 oz. of Orange-Ancho Mango Salsa. Serve alongside ½ cup pilaf. Repeat for remaining orders, as needed.
