Strawberry Spinach Salad with Raspberry Vinaigrette

Fresh berries add a pop of color to this nutritionally satisfying salad and the dressing adds a sweet tart taste.

Strawberry Spinach Salad with Raspberry Vinaigrette
Ingredients

2  c Raspberries, IQF, thawed (or fresh)
1  bag Foothill Farms® Lido Italian Dressing Mix (#J342)
1  c Granulated sugar
2  c Cold water
1  qt White distilled vinegar
2 1/2  qts Vegetable oil
1  c Honey (locally-sourced, from clover)
48  c Fresh baby spinach
24  c Shredded radicchio
1 1/2  c Slivered almonds
1 1/2  c Wheatberries, red, cooked, chilled
12  c Sliced strawberries, IQF, thawed (or fresh)
Instructions
  1. Puree raspberries until smooth. Set aside.

  2. Pour Lido Italian Mix (8 oz) into a 12-quart mixing bowl of an electric mixer with a wire whip attachment. Add sugar. Pour in cold water and mix well on medium speed

  3. Pour in vinegar and mix well on medium speed. Slowly pour in vegetable oil, pureed raspberries and honey. Mix until thoroughly combined. Reserve cold.

  4. For one salad: Place 2 cups spinach and 1 cup radicchio in a salad bowl. Top with 1 Tbsp almonds, 1 Tbsp wheatberries and 1/2 cup strawberries. Drizzle with 2 Tbsp of Raspberry Vinaigrette.
