Sweet Potato Fries with Steakhouse Blue Cheese

Side dishes are emerging as more of a menu focal point. Try crispy seasoned sweet potatoes with a tangy Steakhouse Blue Cheese Sauce.

Sweet Potato Fries with Steakhouse Blue Cheese
Amount Item
1  bag Foothill Farms® Blue Cheese Dressing Mix (#V403)
1/2  gal Buttermilk
1/2  gal Mayonnaise
1  c Pureed roasted garlic
1/2  c Horseradish
1/4  c Worcestershire sauce
9  lb Sweet potato fries, IQF
  Kosher salt, to taste
1 1/2  c Blue cheese crumbles
  1. In a large mixing bowl add Blue Cheese Dressing Mix (3.4 oz) to buttermilk. Mix well with wire whisk or electric mixer at low speed.

  2. Add mayonnaise, garlic, horseradish and Worcestershire sauce. Continue mixing at low speed for two minutes, until smooth. Reserve cold.

  3. For one dish: Cook and season 6 oz of sweet potatoes. Place hot fries on a serving dish. Drizzle with 2 Tbsp Steakhouse Blue Cheese Dressing and sprinkle with 1 Tbsp blue cheese crumbles.
