Southwestern Beef and Black Bean Soup

This hearty soup is sure to satisfy the biggest of appetites.

12  oz yellow onion, julienned
2  oz minced garlic
1  c olive oil
20  oz cooked beef tips
48  oz black beans, rinsed
1/2  c barbecue sauce
1  gal Hot water (180-190ºF)
1  bag Foothill Farms® Irish Vegetable Beef Flavor Soup Base Mix (#059T)
  sour cream
Instructions
  1. In large stock pot, saute onions and garlic in olive oil until translucent.

  2. Add cooked beef tips and rinsed black beans and bring up to temperature.

  3. Deglaze pot with barbecue sauce.

  4. In a separate mixing bowl or container, add hot water. Add contents of Soup Base (11 oz) to water while stirring with a wire whip or with a mixer on low speed. Continue stirring until mix is completely dissolved and smooth in body.

  5. Add soup to pot. Slow simmer (never boil) and allow to cook for 10 minutes, stirring occasionally.

  6. Ladle into serving bowls. Garnish with sour cream.
