Serve this classic comfort food dessert when it's raining leaves of color and there's a nip in the air.
|1 qt||Cold water|
|1 16 oz||Pumpkin pie filling|
|1 bag||Foothill Farms® Bread Pudding Mix (#102T)|
|1 lb||Bread cubes (stale bread preferred)|
|1/4 cup||Brown sugar|
|1/2 cup||Chopped pecans (optional)|
|1/4 cup||Butter or margarine|
|Cream cheese icing (optional)|
Grease half pan with butter. Set aside.
Pour cold water into mixing bowl. Add pumpkin pie filling and whisk together. Pour contents of Bread Pudding Mix (20.32 oz) into water while vigorously stirring with a wire whip until smooth.
Add bread to wet mixture and gently stir to combine.
In separate bowl combine brown sugar and chopped pecans. Mix to combine. Sprinkle mixture over bottom of prepared baking dish. Evenly spot with pieces of butter.
Pour bread pudding mixture into baking pan, over sugar/nut/butter mixture, and bake at 375ºF for 40-45 minutes.
Remove bread pudding from oven. Product will settle and shrink some upon cooling. To serve warm, cool bread pudding for 10 prior to cutting. Drizzle with cream cheese icing.
