A versatile blend of vegetables that's kicked up in flavor with the addition of Enchilada Sauce. Great alone, over rice or served with seafood, beef or chicken.
|1/2 cup||vegetable oil|
|1 qt||thinly sliced onions|
|1 qt||sliced mushrooms|
|1 qt||thinly sliced green peppers|
|2 cups||thinly sliced red peppers|
|2 qt||Foothill Farms® Enchilada Sauce (#532), prepared per package directions (makes 1 gallon)|
In a large pan saute onions, mushrooms and peppers in oil until tender and starting to turn color.
Stir in prepared Enchilada Sauce and continue to cook until sauce begins to adhere to the vegetables, approx. a few minutes.
OPTION: Add cooked shrimp, beef or chicken and ladle mixture over cooked rice.
NOTE: Enchilada Sauce yields 1 gallon. This recipe uses 2 quarts. Store remainder in tightly covered container in refrigerator.
