|10 lb||Diced chicken, fully-cooked|
|3/4 gal||Hot water (180°-190°F), divided|
|1 bag||Foothill Farms® Mandarin Orange Sauce (#V428)|
|1 bag||Foothill Farms® Asian Noodles (#S141)|
|3 lb||Shredded cabbage|
|80 bags||Doritos® Brand Spicy Sweet Chili Reduce-Fat Tortilla Chips|
To prepare chicken: Thaw chicken in cooler overnight or until fully thawed.
To prepare sauce: Pour 1/2 gal hot water into mixing container. Pour contents of Sauce Mix (16.5 oz each) into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
Divide chicken into full line pans. Pour sauce evenly over. Place in 350°F convection oven for 15 - 20 minutes or until internal temperature reaches 165°F. Remove from oven and place product in warming cabinet until served. Hold at temperature above 140°F.
To prepare noodles: Cook noodles according to al dente package directions. Drain and rinse in cool water to stop cooking. While noodles are cooking, add contents of Noodle Seasoning packet to 1 qt hot water. Mix well and let sauce sit at least 5 minutes. Pour sauce over noodles and toss to coat. Sauce will absorb into noodles. Place in half pan until served. Hold at temperature above 140°F.
Gently crush chips then cut open the top (or the side) of the bag.
Add 1/4 c Asian Noodles, 1/4 c shredded cabbage, 2 oz Mandarin Orange Chicken directly into bag.
Stir together and head out the door with your bagful of Asian-Style Walking Taco.
