Directions For Use

RED THAI COCONUT CURRY
PREP TIME: 15 MINUTES

INGREDIENTS

• 1 pouch of Orrington Farms® Meal Creations® Red Thai Coconut Curry Sauce
• 3 Tbsp olive oil
• 1 small onion, diced
• 3 cups broccoli florets
• 1 small red bell pepper, chopped
• 1 - 8oz package mushrooms, sliced
• 1 - 15.5oz can chickpeas, drained and rinsed
• Optional: 1 lb meat**, diced (your choice chicken, shrimp, pork) instead of chickpeas.

• Shake sauce in pouch before opening.
• If using meat: In a small bowl, mix diced meat with 2 Tbsp of sauce from pouch. Stir to incorporate and set aside to marinate.
• Wash and prepare vegetables.
• In a large skillet with high sides, heat oil over medium high heat.
• Add onion and broccoli, cook for 4-5 minutes stirring occasionally.
• Add bell pepper and mushrooms. Cook for 4-5 minutes stirring occasionally.
• Add chickpeas (or marinated meat), then sauce. Stir to combine and cook 4-5 minutes, or until meat is cooked and vegetables are heated through. Stir occasionally.
• Serve with cooked rice or noodles, if desired.
